- 400 gr espinacas hervidas
- 250 gr queso ricota
- 1 huevo

- 50 gr mantequilla
- 50 gr harina
- 700 ml leche
- Nuez moscada

- 4 cucharas parmesano rallado

- Crepes: en un bowl batir los huevos, unir harina y la sal. Unir la leche y batir a mano hasta sea homogénea. Tapar con papel film y dejar descansar media hora.
- Preparar la bechamel: desolver a fuego dulce la mantequilla quitar de el fuego y unir la harina. Mezclar con una cuchara de madera hasta se forme una crema. Subir en el fuego y unir toda en una vez la leche fría y seguir mezclando con un batidor de mano. Cuando será casi lista (tiene que espesar como una crema suave) unir poquita sal, el parmesano y la nuez moscada
- Preparar el relleno: cortar las espinacas hervidas con un cucillo y mezclar con el parmesano, ricota, 1 huevo, nuez moscada y un poquita de sal al gusto.
- En un sartén poner un poquita de mantequilla y unir unas cucharas de el compuesto de las crepes y cocinarla dándole vuelta en ambos los lados. Cuando son listas ponerle encima el relleno y cerrarlas como en la foto.
- Calentar a 200 grados el horno. Untar con mantequilla una bandeja para horno y poner nuestras crepes.
- Tapar las crepes con la bechamel,"mancharlas" con poquita salsa de tomate (en esta foto ya es mucha☺️) y en fin cubrir con el parmesano rallado.
- Cocinar en horno caliente hasta sean bien doraditas. Más o menos 20 minutos. Dejarlas enfriar 10 minutos y servir! Buon appetito!
